Matthew's #1 Favorite Christmas Cookie




Russian Tea Cakes

INGREDIENTS:
1 cup butter
1/2 cup confectioners' sugar
2 1/4 cups all-purpose flour
3/4 cup chopped walnuts
1/4 teaspoon salt
1 teaspoon vanilla extract
1/3 cup confectioners' sugar for decoration


DIRECTIONS:
Combine all ingredients, mix well.
Refrigerate dough until chilled.
Roll dough into 1 inch balls and bake for 15 minutes in a preheated 350 degree F (175 degrees C) oven.
Once baked, roll while still hot in confectioners' sugar until coated. Let cool. Lightly dust with more confectioners' sugar.

I always make sugar cookies, and end up eating 3/4 of them! So I'm trying to hold off on baking at least for a little while.. we'll see how long I make it! :)
These look so yummy, I'll have to give them a try. Do you use a cookie press?

I made the Russian Tea Cakes for my hubby's work Christmas party last night, along with Rocky Road fudge and iced sugar cookies.. they were a huge hit! Thank you for the idea, my oldest LOVES them -- new favorite! :)

They ARE pretty awesome, aren't they?? ;) Glad you found a new favorite. Although finding new cookie favorites can be dangerous to the physique!
